From Leigh Nash, the creator:"I have never been a big fan of sweet chilli sauces. With this sauce, I wanted to make one that could convert even the most hardcore chilli fans. The difference with the dingo sweet chilli is that I ferment the chillis and garlic for 4 to 6 weeks, giving the sauce a nice natural sourness to balance and counteract the sweetness.
It's also a little hotter than your average sweet chilli sauce, giving you a good balance of Thai flavours: sweet, sour & hot"
